Today is National Spaghetti Day, and who doesn’t love a big bowl of noodles? The problem is, that same cozy comfort food packs a serious carb punch - just 2 ounces of spaghetti has around 41 grams of carbohydrates! That’s almost your whole day’s worth if you’re watching your intake.
But don’t worry, you can still enjoy all the flavor and comfort of pasta without the heavy carbs. Here are a few of my favorite swaps:
Zoodles (Zucchini Noodles)
If you haven’t tried zoodles yet, you’re missing out! These spiralized zucchini noodles are easy, healthy, and surprisingly satisfying. You can make your own with a veggie spiralizer or grab pre-made ones from most grocery stores. Sauté them for just a few minutes with olive oil, garlic, and your favorite sauce - they’ll soak up the flavor beautifully.
Shirataki Noodles (Miracle Noodles)
These translucent noodles are made from konjac root and are virtually carb-free! They have a slightly chewy texture and work perfectly in stir-fries, ramen, or creamy Alfredo-style dishes. Just rinse and boil them first to get rid of their natural aroma, then toss with sauce or protein for a filling low-carb meal.
Spaghetti Squash
Roast it, scrape it, and you’ll get long, tender strands that look and twirl just like spaghetti - but with a fraction of the carbs. Top with marinara, pesto, or even meat sauce, and you won’t even miss the pasta.
Palmini Noodles
Made from hearts of palm, these noodles have a mild flavor and firm texture that pairs great with tomato or cream sauces. They’re another ready-to-eat, low-carb alternative that’s popping up in stores everywhere.
